I hate to throw away food, but I don't like over-ripe bananas at all. In fact, I won't eat them any other way than this. When I found myself in possession of 3 seriously over-ripe phallic fruits I had no other choice but to whip out the recipe book and get to work. It was only then that I realized this recipe belonged in the Poor Fangirl category. It requires ingredients most of us have floating around the house anyhow, and it's a great way to use food that would otherwise go to waste.
I don't own a loaf pan, so I made this in a brownie pan and cut the baking time down to 30 minutes.
3 very ripe bananas
1 c sugar
1/2 c margarine (1 stick)
1 teaspoon baking soda
1 1/4 c flour
That's it!! Easy, right? I add a teaspoon or so of cinnamon but it's not called for in the recipe.
Preheat the oven to 350 degrees.
Mash the bananas roughly and melt the butter in the microwave. Mix all ingredients together until it forms a batter, then pour it into the loaf pan to cook for 45-60 minutes depending on how you like it. My mother likes to butter the slices, so she cooks it for longer to make sure it's stiff enough. I like it moist (lol) with nothing on it, so I cook it for closer to 45 minutes in a loaf pan.

I love it here. We had our first real dusting of snow that stuck around last night. I can't wait to witness a great white-out snowstorm here. I hate that when it gets dark I can't see anything at all outside, because it means I miss any good storms that happen at night. >.<; It's just so dark that if I have to walk out to the road at night I have to take a lantern like it's the 1800's or i'll wander into the road.
Groceries are too expensive. >.<; For some reason it's okay to charge 5 dollars more for everything just because I live in the middle of nowhere. At least it's not like Alaska where a carton of milk is 15 dollars, but STILL.
I wonder if I'll ever get bored of all the nothing around here. I sorta doubt it. Give me time to work without distraction, sleep and eat when I want, and turn my music up loud without any parents, roommates or neighbors to yell at me about it. XD
